Udi's Friday bread rolls

Challah rolls for Friday. Must be enjoyed with Matbucha, Schnitzel, Fried eggplan and fried hot pepper. IYKYK.

Grab your Kitchen scale, you're going to need it.

These rolls achieve their unique texture due to the precision of this recipe.

In a bowl mix together Bread flour, salt. In a seperate bown whisk together eggs and water. The amount of water is such as to make the total mixture weigh 265g. Add yeast and sugar and mix well, let sit for 10 minutes .

In a mixer, combine everything and knead for 5 minutes, then add oil and knead 5 minutes more.

Cover and set aside to rise for 1 hour . Next, portion the dough into equal rolls. Cover the rolls and let rise for 40 minutes .

Shape the rolls into a long sausage and braid into a roll. Cover and let rise for 40 minutes more.

Brush with two layers of egg-wash (brush-dry-brush) and sprinkle with your choice of topping (as long as it is sesame).

Bake in an oven at 350F for about 30 minutes . The rolls should be a brown and shiny on top and a little brown on the bottom. Enjoy!
